Liberica season

This year, our farm processes Liberica using two methods: natural and anaerobic natural. We’re always in search for the best approach to retain and highlight the terroir and the unique characteristics of the bean. Over the seasons, we found out that natural is some of the best, simple yet super effective.

/Red peppercorn/

When we first started learning more about pepper processing, we realized how similar it is to coffee.

Green peppercorns → dried → black pepper
Fully-ripe peppercorns → dried → red pepper

Black pepper is sharper, more straightforward spicy.
Red pepper is softer, a bit sweet, a bit floral. Kind of like what happens when you work with fully ripe coffee cherries.

Same plant - different timing - completely different story.

knowing how our coffee tastes is important to us, our mini lab room is available all the time for us testing our coffee.
last year, we did quite a lot of processing methods and we do the cupping and test for all.
this year, we focus on only two of them.

Our review

Truly an incredibly wonderful place! On the farm, the pepper plants grow tall. Next to them, the coffee plants thrive. There are Arabica, Robusta, and Liberica coffee. There are also many macadamia trees. But the best part of the farm is definitely the owners. Not only are they super friendly, but they also have such a contagious passion for their plants and the farm that you can’t help but like them!
